How can I remove the Video link at the top and change the name of the Portfolios link?

You're able to adjust or remove the Video menu via the UPLOAD MULTIMEDIA module in the editSuite:

You can rename portfolios (which appear on the front of your site) and libraries (used to archive and organized images inside the editSuite) via the NAME PORTFOLIOS AND LIBRARIES module:

Perhaps your 'Video' button isn't a multimedia menu? If it's a Vimeo page, you are not able to remove this button via the editSuite. You can, however, chance this type of page into a simple jpeg page and rename it until you're ready to feature video.
